A very underestimated roasting joint which is great hot or cold. Our dry cured joints do not need soaking as they are not overly salty. Great boiled with herbs or garlic (leave to cool in the water once cooked) or open roasted and glazed with honey and mustard(Delia is worth a look regarding glazed ham joints).
